Why is the overnight described as a winter booking here?
Because that is when it gets asked for. Dark by half past five, weather that settles the question of going out, and a night that was going to be long anyway. It is available in June and it is booked far less often then, which is not a rule about the format so much as an observation about what people do with a light evening.
What if the hotel turns the heating down overnight?
Ask the building before you book, because some do and it is not always obvious from the room. Eight hours in a room that drops five degrees at two in the morning is a poor use of 1,250 euros. If the heating cannot be held, a three hour booking at 540 earlier in the evening is the better decision, and the thread will say so plainly if you mention it.
Most of the block will be sleep. Is that wasted?
No, and it is worth being clear that nothing is refunded or extended because of it. Somebody being there through the night is a large part of why eight hours were taken rather than three. She stays until the block ends whether you are awake for it or not. If what you want is company until sleep and then an empty room, book three hours at 540 euros and say so in the thread.
